Burrata with Roasted Tomatoes

 

Sometimes the simplest of things are the best. This recipe promises divine simplicity and it's a beauty to-boot. 


Have you ever tried burrata? It's a fresh mozzarella cheese that's formed into a pouch and filled with soft, stringy curd, and cream. It's heaven. Burrata literally translates into "buttered", which is a glimpse into it's lovely flavour and texture. It can be difficult to find, look for it in Italian and specialty cheese shops or larger grocery stores.

 

Burrata with Roasted Tomatoes

1 ball burrata

1 pint cherry tomatoes

1-2 cloves garlic, peeled and roughly chopped

olive oil

salt & pepper

1 small bunch basil, chopped

 

Preheat the oven to 350F. Toss the cherry tomatoes and garlic cloves with 1-2 Tbsp olive oil, spread over a baking sheet, season with salt and pepper, and roast in the oven for 15-25 minutes (depending on how large your tomatoes are). 

Plate the burrata  and surround with tomatoes. Drizzle with fresh olive oil. Season with salt and pepper. Garnish with chopped basil.
