Week six includes

mixed lettuce with nasturtium flowers

What to do with them? How to Store? Recipes below!

 

garlic – we don't need to tell you who to use up this little gem. 

(keep in a dark/dry place)

 

snap peas - don’t forget to trim your peas before eating! You most certainly can eat the whole thing, but sometimes the “string” can be unpleasant. 

(store in a bag in the fridge)

 

zucchini - chances are you already know exactly what you want to do with these little babies. Caitlin likes them best on the BBQ, cut into quarters, drizzled with olive oil, sprinkled with salt and pepper, and grilled until tender. If you get a flower on your zucchini, they're edible too!

lettuce mix – you know the drill. Salads, salads, salads! Though you could always try these Spicy Steak Lettuce Wraps. nasturtium flowers are edible, so add them to your salad!

scallions – we love scallions, you can add them to just about anything!

(store in the fridge in a bag)

 

carrots – Have you tried carrot pesto yet!?

(Remove the carrot tops (they leach moisture from the roots) before storing them both in plastic bags in the fridge)

 

sage – use this fresh in recipes, make some tea, or hang it to dry for a later use.

 

parsley – tuck it into a glass with an inch of water at the bottom and leave in the fridge.

 

 

raspberries – it doesn't get any better than this. Fresh from the field raspberries. enjoy!

 

swiss chard – rainbow swiss chard at that! we like to saute it in olive oil, with some salt and pepper, then finish it with a squeeze of lemon. On weekends I saute swiss chard with onions and then add s couple whisked eggs to make a jumble. Finish with a handful of mixed fresh herbs, a sprinkle of cheese, and a dash of hot sauce.

kale – remove the ribs, give it a good massage and make yourself a salad! or some pesto! or some chips!

beets – don't forget that you can eat your beet greens. juice them, saute them, make them into fried greens meatless balls.

beans – ahh the first beans of the year. They're such a beautiful thing. So tender and crisp. We eat a lot of raw beans around the farm, they make an excellent snack. We also love to steam them and then slather on the butter, maybe some salt and pepper.
