It sounds a little strange - we know - but give it a try! Sage infused honey is delicious.
First, find a small, clean jar. Chop up your fresh sage leaves into small pieces and fill the jar. Then pour honey over the sage until it's completely covered. Use a chop stick or a knife to push the sage down and to allow all the air bubbles to escape. Cover with a lid and store in your cupboard for... well forever. Honey is a natural preservative. We like to eat this by the spoonful, straight from the jar. It's also good on toast or stirred into sage tea. You can strain the leaves after the honey has infused for a week or two, or just eat the leaves as you eat the honey.
