Tomato & Ricotta Toast

Sometimes the most satisfying and delightful meals can come from a few simple ingredients. This tomato & ricotta toast is the stuff that early morning dreams are made of, and second breakfast dreams, and lunch-time dreams, and supper dreams - any time of day really, this toast is there for you. My only recommendation is a good quality bread for the base of this toast, I went with an artisan sourdough.

Tomato & Ricotta Toast

1 slice of bread

1/3-1/2 cup ricotta cheese

sliced tomato

basil leaves, torn of thinly sliced

salt, pepper, and extra virgin olive oil - to taste

Toast your bread. Top with the ricotta cheese, followed by the sliced tomato. Season with salt and pepper. Drizzle with extra virgin olive oil and sprinkle with basil leaves.
