week fifteen includes
tomatoes - mixed
mixed peppers – sweet and hot
onions
beets
garlic
carrots
mixed greens
turnips
potatoes
kohlrabi
beans
bok choi
parsnip
two kinds of mint
What to do with them? How to Store? Recipes below!
garlic – by now you've likely got a decent stash of garlic, why not try this roasted garlic soup!?
(keep in a dark/dry place)
carrots – this carrot salad with harissa, feta, and mint looks delish. These pickled carrot sticks also look worth a try. Also this carrot soup with miso and sesame looks nice.
(Remove the carrot tops (they leach moisture from the roots) before storing them both in plastic bags in the fridge)
tomatoes – tomato season is coming to a close, just one frost and it's all over - so enjoy 'em while you can!
(store on the counter, never in the fridge)
onion –
(store in a dark, dry place)
beets - roasted beets are a real treat! simple and delicious.
(remove tops and store in the fridge)
mixed greens – you know what to do with these! but we suggest pesto - it freezes well!
(store in the fridge)
potatoes – boil ‘em, mash ‘em, bake ‘em.
(store in dry, dark place. We use a paper LCBO bag)
turnips – these are very similar to the other turnips you’ve seen in the weekly shares. Still not sure how to cook them? We like to eat them raw, with dip. This turnip with dill salad looks good.
(remove tops and store both in the fridge)
parsnips – mmm, don't forget thanksgiving is just around the corner. But if you want to dig in before then, we love roasting parsnips with other root veg - carrots, onion, potatoes.
(store in the fridge)
beans –
(store in the fridge in a plastic bag)
mint – make some fresh tea! or maybe some mint chocolate chip cookies.
(tuck into a glass with an inch of water at the bottom and leave on your counter)
kohlrabi – cut off the outside skin, it's tough! Eat the juicy white flesh within. We like to eat it raw as a snack, but you can also pickle it, or make fries!
(store in the fridge)
bok choi - stir-fry!!!
(store in a bag in the fridge)
