Garlic can be ** hardneck and softneck.
The hardneck varieties send up scapes in the spring. We clip them off and put them in your CSA baskets, they're delicious. If they were left to grow they would turn into a flower and the garlic bulbs int he grounds wouldn't grow nearly so big.
Storage - store in a basket or paper bag in a cool, dark place.
